Backyard Smoked Chicken Thighs (Your Gateway Cook)
Cheap, forgiving, and criminally good. If brisket is grad school, this is the fun elective.
Ingredients
- Chicken thighs, bone-in8 pieces
- BBQ rub3 tbsp
- Apple wood chunks3 pieces
Method

Pat thighs bone-dry. Wet skin will never crisp, and rubbery skin is a crime.

Season under and over the skin. Get in there.

Smoke at 275°F for about 90 minutes to 175°F internal.

Crank the heat or hit 'em on a hot grate for 5 minutes to set the skin.

Sauce or don't. In Texas we'd rather you didn't, but I won't tell.
