Foolproof Chocolate Chunk Cookies (The Only Recipe You Need)
Crisp edge, molten middle, chunks not chips. I've killed off every other cookie recipe you own.
Ingredients
- Brown butter170 g
- Dark chocolate, chopped into chunks250 g
- Plain flour250 g
- Brown sugar200 g
- Egg + yolk1.5 whole
- Flaky sea salt1 pinch
Method

Brown the butter until it smells like toffee, then cool it. This is non-negotiable magic.

Whisk in sugars and eggs until glossy. Fold in flour, then the CHUNKS.

Chill the dough 24 hours. I know. Do it anyway. Deep flavour lives in patience.

Scoop fat balls, bake at 180°C for 11 minutes — they'll look underdone. Trust the witch.

Flaky salt on top the second they leave the oven. Let them set 10 minutes if you can resist.
