High-Protein Crispy Tofu Meal-Prep Bowls
Four days of lunch in one hour. 32g of protein a bowl and it doesn't taste like sadness.
Ingredients
- Extra-firm tofu800 g
- Cornstarch3 tbsp
- Cooked brown rice4 cups
- Broccoli2 heads
- Peanut-lime sauce1 cup
Method

Press the tofu HARD — 20 minutes under something heavy. Water is the enemy of crisp.

Cube, toss in cornstarch and a little oil, roast at 220°C for 25 min, flipping once.

Roast broccoli on a second tray at the same time. Efficiency is self-care.

Portion rice, tofu and broccoli into four containers.

Keep the sauce SEPARATE until serving or you'll have soggy regrets by Wednesday.
