Perfect Ajitama (Soy-Marinated Soft Egg)
The jammy egg that launched a thousand food photos. Six minutes and thirty seconds. Set a timer, this isn't a suggestion.
Ingredients
- Eggs, fridge-cold6 whole
- Soy sauce80 ml
- Mirin80 ml
- Water80 ml
Method

Boil water, gently lower in cold eggs. Exactly 6 minutes 30 seconds. Not 7. Never 7.

Shock in ice water immediately and peel under running water.

Mix soy, mirin and water. Submerge eggs (a zip bag with air pushed out works).

Marinate 12-24 hours. Halve to reveal the jammy orange center. Post the photo. You've earned it.
